Healthy Blogs and Recipes

We all know that the start of a new year is going to bring with it lots of requests for healthy blogs and recipes, so let's jump the gun a little. Some of us on the board decided that it might be a good idea to post healthy blogs and recipe links here on the blog so that when the questions come in we have a quick resource to send people to. Plus it's a great way to have a handy reference to go back to. So, if you have anything healthy that you would like to recommend to people post it in a comment here. Thanks and Happy New Year!

Dec/Jan Recipe Exchange

Has this ever happened to you???…

You have a crowd invited for dinner, and you wind up spending the vast majority of the visit tied to the stove??? In an attempt at having more time to enjoy the moment while tossing together an equally impressive meal, the theme this time round is called...

2. Please make the title/subject of the email, the name of the recipe. For example, Subject: Watermelon Sorbet.
3. If you use a recipe from someone else, be sure to cite your source.
4. You have until FRIDAY, December 5 to enter.
5. I will send you your SUPER FUN exchange recipe by email on SATURDAY December, 13.
6. You have until SATURDAY, January 10 to post the recipe, review and pictures (if you can) to your blog or in a post on the “What’s Cooking Board” if you don’t have a blog.
7. Please email me at

Oct/Nov Recipe Exchange Roundup

Well that's it, this round of the recipe exchange is over. I had so much fun organizing this and seeing what everyone's favorite fall food is! Unfortunately there were a few recipes that were not made or I didn't receive the link to. If you made your recipe and just didn't get it sent to me feel free to send it and I'll add it, no problem. Oct/Nov Recipe Exchange

Hi girls! I'm doing the recipe exchange this time and, after some great suggestions, am happy to announce that the theme this time is Fall Favorites. Anything you have in your blog, recipe collection, or just floating around in your brain that is in any way fall related works here.

If you are interested in participating:
1. Email me at kayla.a.cr @ gmail dot com and include your first name, nest name, your recipe submission, and any food allergies/requests.
2. You have until next FRI, OCT 17 to enter.
3. I will send you all emails by MON, OCT 20 with the recipe you will make.
4. You have two weeks to make it. Make the recipe, post it to your blog with what you thought about it, and post it on What's Cooking (or just post there if you don't have a blog.
5. PLEASE email me by MON, NOV 3 (just after those great Halloween parties!) and include a link to your blog if you have one. If you don't have one just add what you typed about the recipe on WC into the email.

It came together quickly & everyone liked it! I think it'd also be great on some bagel chips or crostini. I couldn't find canned shrimp, so I used about 8 oz of shrimp chopped finely.

Made by: RyansRose - no blog, but here are her thoughts: This recipe was as simple to make as promised. I substituted half & half and was very satisfied with the results. I have a very old stove, so my oven tends to run hot. I split the batter between two 8" loaf pans and baked for 75 minutes, which was a little too long and gavethe loaves a thick crust on the sides and bottom. The inside of the cake is perfect! The density of the crumb is just what you'd expect from a pound cake without being heavy or dry, and it has a very pleasant vanilla flavor that I found goes well with a variety of toppings, but is perfectly delicious on its own.

Recipe Exchange - slight delay

Hi everyone!

I am psyched to host the Aug/Sept exchange!!

I had a cute little poll ready to post to get "votes" for themes (love the new poll feature!) but I cannot get on the Nest. Grr! It shows me the board for about 3 seconds, and then directs me right to the main page. Frustrating!!

In addition, I am having some computer issues and may not be bringing my laptop on vacation like I intended. So if you don't hear from me until next weekend, don't think I have forgotten my hosting duties!

Hopefully this exchange will be up and running sooner rather than later. In the meantime... happy cooking!

Since she doesn't have a blog, here is what she sent me as her response to the recipe :)

Anyway, I made the lemon sorbet last night and tasted it this morning. YUM! It was really easy - although a little painful for me, I have really sensitive skin and always have trouble juicing lemons. Still, it came together in a flash! I chilled it overnight and then DH and I tasted it this morning, and it was wonderful! I can't believe that so few ingredients and so little work turned into such a great result! I'm looking forward to enjoying a bowl of it tonight after dinner.

Mar/Apr Recipe Exchange

It's time for the Mar/Apr WC Recipe Exchange! This round's theme is Regional Cuisine. Please choose a recipe that you think complements the region, state, etc. in which you live. You may choose any category - breakfast, appetizer, main course, dessert, etc. Please do not worry about what others may classify as your region, but go by your own definition.

The process:

Q & A with Doril

When did you start cooking?

"Start" is a relative term. The closest I got to cooking before I went away to college was a box of Dunan Hines cookie mix with some friends. Once I was living on my own, I still wouldn't call what I cooked "real cooking." Steamed veggies, rice and a chicken breast do not a gourmet meal make. I think I really started cooking when I moved in with my then boyfriend-turned fiance-turned husband. I couldn't stand how unhealthy he ate and I was determined to try to turn that around. My next mile marker on the cooking journey was when I joined Weight Watchers last year. I realized that I could still eat all the delicious, homemade meals I wanted...I just had to fiddle with some of the ingredients and watch the portions size. Thats when things really took off and i haven't looked back!

Who inspires you?

If you go to the first post in my blog, I talk about my mom. Her and my dad raised my brother and I right in learning early on that square meals (protein, veggie, starch) and salads and fruit are good to eat, not just good for you. There is a rarely a time when my mom cooks something that isn't outstanding and she never uses ingredients like sugar or salt.

If you could have lessons from one chef, who would it be?

As unhealthy as her meals are, I'd love to spend a day with Ina Garten in her kitchen. We would pick herbs and veggies from her garden, melt butter by the pound, go visit out local fishmonger, and sip wine at the end of the day by the ocean....it would be a great day.

Favorite thing to cook/bake? Etc.

Anything Italian. Lasagna, anything parmagiana, pizza, chicken.

What's one fear you have in the kitchen?

I don't really have any fears right now, just disinterests like homemade cake. I'd su much rather buy a box mix and call it a day. My big fear used to be yeast. I tackled it recently and it wasn't as scary as I thought it would be but my recipes weren't exactly 100% successful either. I'm not running back to try them again.

Jan/Feb Recipe Exchange

Time for the Jan/Feb WC Recipe Exchange! This rounds theme is Healthy Recipes. For this round you can choose any category - breakfast, appetizer, soup, etc. And don't worry about what others define as healthy; go by your definition.

What to do:
1) Pick a healthy recipe that you enjoy.
2) Submit the recipe to wc.recipeexchange at yahoo.com. Submission deadline is Friday, 25 January.
3) Make the recipe!
4) Post the recipe, review, and pictures (if you can) to your blog or in a post. The deadline to make your recipe is Sunday, February 17th.
5) E-mail the WC Recipe Exchange with a link to the blog entry or post so we can keep track of the entries.

Rules:
1) Include your nestie name, any food allergies, any dietary restrictions, and dislikes.
2) Please make the title of the e-mail the name of the recipe. For example, Subject: Cinnamon-Apple Wheat Pancakes.
3) If you use a recipe from someone else, a book, magazine, or on-line, be sure to cite your source.
4) If a previously submitted recipe was not made, you can re-submit the same recipe.
5) A list will be kept of who has and has not made their recipe.
